There's a pot on my stove right now, bones and vegetable scraps simmering away, because it's a rainy, gray kind of day, and honestly, is there any better excuse? But here's the thing — I didn't inherit this from anyone. My own grandmother never made bone broth, never touched a home remedy, never really connected food and healing at all. She ate the standard American diet, developed type 2 diabetes, and later died of colon cancer. There was no wisdom passed down in my family about this kind of thing. I've had to go find it myself.

Okay, But What's Actually IN Bone Broth
When you simmer bones and connective tissue low and slow, the collagen breaks down. It turns into gelatin and free amino acids — mainly glycine, proline, hydroxyproline, and glutamine. Not exotic, mystery compounds.
These are the same building blocks your body already uses for your gut lining, your joints, and your skin.

The well-established stuff:
Joint health — a 2024 meta-analysis of 35 randomized controlled trials (over 3,000 people) found collagen derivatives actually reduced pain and improved function in hip and knee osteoarthritis, with no bump in side effects. That's real clinical backing, not wellness-blog hype.
Sleep — glycine has decent research behind it too. Studies found a few grams before bed improved sleep quality and cut next-day grogginess in people who struggled to sleep.
The promising-but-not-fully-proven stuff (this is the gut health part, so pay attention):
Glutamine is literally the primary fuel source for the cells lining your intestine.
Glycine has documented anti-inflammatory properties that support your gut's mucosal lining.
In animal studies, bone broth and its amino acids have reduced intestinal inflammation, strengthened tight junction proteins (basically the "seals" between gut cells that control what gets through), and reduced measurable intestinal permeability.
A 2025 review co-authored by a Mayo Clinic gastroenterologist looked specifically at bone broth's nutrients and gut barrier function, and found real, mechanism-backed reasons to think it supports the gut barrier and calms inflammation — while being upfront that a lot of that evidence is still from individual amino acid studies and animal models, not massive human trials of broth itself.
Here's my honest take: that gap doesn't mean the tradition is bogus. It means the biology is genuinely sound and well-documented, while the "gold standard, drug-approval-level" human trials on whole broth just aren't fully there yet. Both things are true at once, and I think that's a more interesting story than either "it's basically medicine" or "it's just a placebo in a mug."

Add bones and vinegar to a large stockpot or slow cooker. Let sit 20–30 minutes before adding heat — this helps the vinegar start pulling minerals out.
Add vegetables and cover with water.
Bring to a gentle simmer, then reduce the heat as low as it goes. Skim off any foam that rises in the first hour.
Simmer 12–24 hours (stovetop on low, slow cooker on low, or Instant Pot on high pressure for 2–3 hours if you're short on time).
Strain, salt to taste, and store. Keeps 5 days in the fridge, or freeze in portions for up to 6 months.
Building Instead of Inheriting
This is kind of the whole point of what I'm doing here. Not everyone grows up with this kind of wisdom — I didn't. But that doesn't put it out of reach. You can go find it, piece it together yourself, and decide what you're going to pass down differently. I'd argue that's just as valid as growing up with it.
